Clinical nutrition and hospital catering, agreement signed between the hospital and the University of Flavors

Food education initiatives, creation of menus for certain pathologies and categories of patients (such as, for example, children and the elderly), refresher courses for kitchen staff and certification of good and healthy catering. These are the 'key' points of the framework agreement signed between the Perugia Hospital and the University of Flavors to enhance the canteen service and thus start a process of improvement and reorganization of internal catering. The initiatives will be presented on Friday 18 March in the presence of the Institutions.

The collaboration project will last two years and will involve the Hospital and the University of Flavors on aspects of nutritional quality, service organization (techniques and technologies to optimize preparations), and food education. Among the actions that will be implemented thanks to the cooperation between the Perugia Hospital and the training center, there will also be the new kitchen layout that will aim at energy saving, optimization of work spaces and containment of production costs. .

For the President of the University of Flavors, Stefano Lupi, it is a “collaboration agreement that looks far ahead. Two excellences have been combined in their respective sectors of competence, to improve the services and services provided by the Hospital which, with foresight, has intended to speak with the University of Flavors, a training center of absolute prestige in food. It is an interesting combination aimed at improving cultural and operational tools in relation to healthy value growth in the culture of food. We intend to carry out research and innovation to improve the nutritional quality of patients, to optimize food techniques and technologies for the benefit of our reference community ".

The acting general manager of the Perugia Hospital, Giuseppe De Filippis, expresses satisfaction with the stipulated agreement: "The Hospital has always been attentive to the enhancement of the peculiarities of the territory and this is where the cooperation with the Università dei Sapori, a first-rate Umbrian training institution for catering professionals. Our staff will benefit from all-round training that will lead us to a higher quality service and attention to the patient ".

The adaptation and improvement of the canteen initiated by the Hospital Management takes into account the "National guidelines for hospital and care catering" of the Ministry of Health which, reiterating the orientation of the Council of Europe, have for some time catering is recognized as an essential part of therapeutic and rehabilitative interventions for the patient.

The collaboration agreement also provides for specific support for the nutritional aspect of the patient, even after his discharge from the hospital.
In recent days, a cook has also been hired for an indefinite period, by means of a public competition ranking, who will be immediately initiated into training thanks to the agreement with the University of Flavors.
